I make my own baby food, excluding oatmeal...I puree fruit and mix it with the enriched baby oatmeal. I went to the store and bought stage 1 again....I did not think about it...he is crawling. Isn't that stage 2? Does it really matter? Can I just finish what I have of stage 1? And what is the difference between stage 1 and 2 baby cereals?

Stage 2 just has a bit more texture to it.
It's perfectly fine to feed him the Stage 1.

Stages are just advertising gimmicks. Feed him whatever you have.

difference between the 2 is texture.
At 7mos most babies are perfectly capable of feeding themselves finger food and even some cut up table food. Try ditching the jars. Just give him the fruit/veg if it's soft and cheerios or the like. Cut up food from your plate and give him that for meals. He really does need to start on finger foods now. It will help him not only get used to different textures, types, and flavors of food, but it will also help him with his manual dexterity.
Go ahead and finish what you have. Try mixing it with cereal.
Don't however give him teething biscuits unless you are ok with a royal mess.
