Why does chocolate turn white if stored too long?

Will chocolate turn white if stored in the refrigerator?

Can one eat the chocolate after it has turned white?

I purchased a number of chocolate bars(Hershey's lite and dark) on sale and stored them in a kitchen cabinet and by the time I got to the last few bars they were in various stages of turning a pale white color and was wondering if they were safe to eat.|||yes it is safe to eat

http://www.whydoes.org/why-does-chocolat鈥?/a>|||yes as to safety, the sugar is floating to the surface the next time you purchase a large quantity, keep them in a cool dark place like the freezer, they are definately temperature sensitive and you have the proof|||its fine to eat chocolate thats gone white,ive eaten it loads before and if it was off id know(i get sick easily)|||it gets oxidized slowly over time. its fine to eat though
